How many times have you looked at aubergines in the super market not knowing what to do with them, or how to prepare them? Well, here’s a delicious recipe (courtesy of healthy food lover Marko) which will leave you wanting more! You’ll need half an aubergine per person, so buy as many aubergines as you need depending on how many will be eating. Boil some rice and chop vegetables of your choice.

We stuffed our aubergines with chili, tomato, parsley,  red pepper, green pepper, courgette and bit of garlic.

Remove the inside of the aubergine like shown above. Then cut the inside of it into small pieces – you’ll stuff it back in with the other vegetables.

Mix the rice, the inside of the aubergine and the other vegetables together. Add olive oil and salt to the mix.

Stuff the aubergines full with the veggie/rice stuffing.

Grate some parmesan cheese over the stuffing. You can add some goat cheese under the parmesan if you wish.

Pop them into the oven for 10-15 minutes and you’ll have a quick healthy and tasty meal on your hands! Eat with a fresh salad on the side!
