Soft, delicate and fruity cake. This recipe belongs to my mum and sister (good girls, they prepared this extra soft cake while I was with them, in Italy, on Christmas holidays). Apple Chiffon Cake
- 4 eggs
- 250 g sugar
- 1 cup milk
- 3/4 cup vegetable oil
- 1 tablespoon cinnamon
- 1 teaspoon vanilla extract
- baking powder
- 300 g flour
- a pinch of salt
- 4 sliced apples
- Icing sugar (optional)
- In a bowl mix together the flour, 150 of sugar, baking powder and salt.
- Add the eggs yolk, oil, milk and vanilla. Add the sliced apples and mix all.
- In a separate bowl beat the egg whites until frothy. Gradually add the remaining sugar and keep beating until you get a stiff consistency.
- Incorporate the beaten egg whites to the batter and pour everything into a cake pan. Bake at 180 degrees until golden. Do not open the oven during baking! Sprinkle some icing sugar on top for decoration.
