Soft, delicate and fruity cake. This recipe belongs to my mum and sister (good girls, they prepared this extra soft cake while I was with them, in Italy, on Christmas holidays). Apple Chiffon Cake

  • 4 eggs
  • 250 g sugar
  • 1 cup milk
  • 3/4 cup vegetable oil
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • baking powder
  • 300 g flour
  • a pinch of salt
  • 4 sliced apples
  • Icing sugar (optional)
  1. In a bowl mix together the flour, 150 of sugar, baking powder and salt.
  2. Add the eggs yolk, oil, milk and vanilla. Add the sliced apples and mix all.
  3. In a separate bowl beat the egg whites until frothy. Gradually add the remaining sugar and keep beating until you get a stiff consistency.
  4. Incorporate the beaten egg whites to the batter and pour everything into a cake pan. Bake at 180 degrees until golden. Do not open the oven during baking! Sprinkle some icing sugar on top for decoration.
