
Hello folks! Another week gone under the grey sky of London. Over the last few weeks only a dull diffuse light over a misty city in black and white has cheered up our mortal souls. Let’s not complain, though. There’s still a few good things that can make our days colorful. A compelling smile, a good movie, a project to work on, a soon to come (or to plan) trip, and food, food, food!
To counterbalance this faded atmosphere I bet on food as a source of color and spice. Colorful and healthy too, not too cheesy nor too fatty. Here’s my Zucchini patties, madame and monsieur, for a hearty breakfast or whenever you want to taste a yummy vegetarian option to burgers. I found out any recipe can be vibrant green if you have some zucchini on hand. And golden like the sun due to a pinch of turmeric. This is a good way to tackle with the lack of sunshine.
Zucchini Patties
- 2 zucchini
- 1 egg
- 3 tbsp plain flour
- 1 tbsp plain yogurt
- 1 tsp turmeric
- salt and pepper to taste
- half chopped onion
- olive oil to cook the patties
- Prepare the zucchini. One zucchini must be grated, the other one finely chopped so to get two consistencies.
- In a bowl, combine the zucchini, egg, onion (chopped), flour, salt, pepper, turmeric and yogurt. Mix well all the ingredients, if needed add more flour to get a firm consistency.
- In a skillet heat a small 2 tablespoons of olive oil. Pour zucchini mixture with a tablespoon, shape them in patties and cook each side for a few minutes until golden. Serve with fresh yogurt on top.
