I may start a new routine in my life: baking on Sunday. I came to conclusion that Sunday is the right day to fill the house with sweet aromas. Not Saturday, when I’m too lazy to deal with the most impertinent ingredient I know (flour, always going everywhere) and least of all a week day when the activity of cooking is solely aimed to defeat starvation. Sunday is perfect for baking: a slow day preceding a week that will see me, like almost every human being in the world, busy or pseudo busy .
I make this Greek Yogurt and Lemon Cake on a Sunday morning mindful of my bright Greek holidays. Greek yogurt goes in the dough (tada!) and a lemon scented syrup goes on top to make the cake moist and wet. Flour, as usual, goes everywhere; a part of it in the dough, the rest spread on the kitchen top and on my clothes :). It’s OK, it’s Sunday morning: I can perfectly bear with this mess.
Yaourtíni: Moist Greek Yogurt and Lemon Cake
- 150 gr butter melted
- 150 gr granulated sugar
- 250 gr Greek yogurt
- 4 eggs
- 250 gr plain flour
- ½ tsp baking soda
- 1 tsp baking powder
- 80 gr semolina flour
- ½ tsp salt
- zest from a lemon
Syrup:
- 2 cups granulated sugar
- 1 cup water
- 2 tablespoons lemon juice
- Preheat the oven to 170 C. Grease the baking pan with a bit of butter.
- In a medium sized bowl, beat the egg whites with a pinch of salt with a mixer at low speed until foamy, and then at high speed until they become stiff. Set aside.
- Cream the butter, sugar in an electric mixer. Add
- the egg yolks one by one and keep beating. Add yogurt, lemon zest, baking soda, baking powder
- and gradually incorporate the semolina and the flour to the batter. Add egg whites, folding gently with a rubber spatula.
- Pour the batter in the baking pan.
- Bake for 30-40 min or well cooked (check with toothpick inserted in the center of the cake, if it comes out clean, the cake is ready). Let the cake cool down at least half.
- Prepare the Syrup: In a sauce pan over medium heat add both water and sugar and bring to a boil; let simmer for 3 min and with care pour it slowly all over the cake.
That’s what i called pure bliss…..love it….cake looks drool worthy…..
This lemon cake looks so soft and moist, I just want to take a nap on it.. then devour it!
I love baking with semolina! It’s an underrated alternative. Is it gluten-free, too?

I think baking every Sunday sounds like a brilliant idea. Especially if you come out with something like this every week. It looks so light and fresh and I’m sure the yogurt gives it a nice texture too!
